Water, when a plant experiences drought like conditions it will begin to wilt due to a loss of turgor pressure; the water pressure inside the cells has fallen dramatically so the cells become more squashed. Wilting also reduces surface area so as a mechanism it also reduces water loss. It is the pressure that keeps a blade of grass straight, but in larger plants this tension may be produced by lignin.
The lignin and hemi-cellulose and fibers are what allow a piece of grass to stand up. Turgor pressure is also a factor that allows plants to stand upright.
