Night Elves can play as Warriors, Druids, Rogues, Priests, Hunters, and once you level to 55 Death Knights. If you want to do Damage, play a Rogue, Hunter, Warrior, Druid or Death Knight. If you want to Heal play a Priest, or Druid. If you want to take damage for everyone else while they do damage be a Warrior, Druid or Death Knight.

Google 'tutorial silent night viola' or type that down on YouTube.com. There should be many tutorials online. If it is not the case I would advise you to find someone who knows or just take courses!

The only locked class should be the Death Knight. It requires you to have a level 55 character on your account and have your account upgraded to Wrath of the Lich King. If another class is locked, then either that class is unavailable to your chosen race or is unavailable until you upgrade your account. For example, currently Night elves can not be mages (will change when Cataclysm is released) so you can not choose them as a class if you want to play a Night Elf. Also Blood Elves and Draeni are not available until you upgrade your account to at least Burning Crusade.
