Bake these seemingly bad girls up and your friends will think you're a Diet Killer. You could tell them they are healthy (egg free, oil free, dairy free) with a zucchini hidde…n in the chocolate cake, buy why ruin the fun?1. Preheat oven to 350ºF degrees. 2. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda and salt.3. In a small bowl, use an immersion blender to blend ripe bananas, 1 cup milk, and vanilla extract. 4. Make a well in the center of the dry ingredients and pour in the wet ingredients. Add the shredded zucchini. Gently fold until all the dry ingredients are absorbed and the batter looks wet and shiny. 5. Divide batter among 12 silicon muffin cups. No need to oil silicon baking cups. 6. Bake 20-25 minutes. Check for doneness by poking the center of a cake with a clean knife or toothpick. If the knife or toothpick is clean when removed, the cake is done. 7. Be very patient and allow cakes to cool in silicon baking cups for 5 minutes. Then turn over and gently push on the bottoms of the baking cups. Chocolate cakes will fall out. If you get a stubborn cake, run a small metal spatula around the edges of the cake to free it from the sides. Continue to cool cakes on a cooling rack.8. While the cakes are cooling, heat the chocolate chips, sugar, and cinnamon in a microwave safe dish in the microwave on 70% power for 1 minute. Check to see how well the chips have melted by stirring with spoon. If they have not melted enough, go another 20 seconds at 70% power. Never melt chocolate chips in microwave on high power. It may burn the chocolate.9. Add 3 to 4 tablespoons of nondairy milk to melted chocolate. Stir until you have a smooth, shiny, creamy, thick chocolate sauce. 10. Move cooled cakes to pie plate or serving platter. Turn them upside down so they look like bundt cakes.11. Divide ganache among the cakes. Start by adding a tablespoon of ganache to cake tops. Push the ganache out to the sides and let it drip down the sides. This is my favorite part next to actually eating the cakes. 12. Once the chocolate cakes are wearing their hats, they are ready to go on parade. They can be stored in the refrigerator until ready to serve. You can warm them up individually in the microwave for 10 to 15 seconds on 80% power to make them taste just like they came out of the oven. You can eat them cold. Try it both ways. (MORE)
