Gold is something that state's "i am of nobility and or royalty" which Christians and Catholics believe Jesus being "The Lord" of us all (Gold has been used as a symbol for purity, value, royalty, and particularly roles that combine these properties.)

Frankincense is something that is used by Rabbi's so it is to show that Jesus had priestly powers (In Egypt, Greece, and Rome it was burned in offering to various dieties, and it was an essential component of the incense burned in both Israelite temples in Jerusalem)

Myrrh is something that is used in embalming which is a prediction of the passion of the cross (myrrh had been used in Egypt for embalming)

The Gold represented the fact that Jesus is the Ultimate King. Gold was a gift for a King.

The Frankincense is used to make incense, which represented that Jesus would also be the Ultimate Priest.

The Myrrh represented the fact that Jesus would die an early death and be embalmed. Myrrh is one of the resins used in the embalming process.
