It's a quote from the film "TOMBSTONE"... It means, basicly "I'll be the one" (to do whatever). I think of the author Mark Twain's character in "Huck Finn", but googling the term "what does it mean I'll be your Huckleberry?" reveals something much more complex, involving the origin of the fruit, etc...Basicly, in a nutshell (pardon the pun) it simply means something along the lines of "I'll be your sidekick", or "I'll be the one to help get 'er done."
The line "I'll be your Huckleberry" was famously said by the character Doc Holliday, played by Val Kilmer, in the movie "Tombstone" (1993). It has since become a popular phrase associated with loyalty and being up for a challenge.
