There are many friends and hirelings that will follow you. Lydia is one of the first, she becomes your housecarl after an early story quest. Other hirelings are available in inns across skyrim. As you progress through guilds, such as the dark brotherhood, you may ask members of the guild to accompany you out into the world.
There are over 100 possible followers in Skyrim. Some of them will only be followers during certain quests and you may never see them again, some will offer to help you for a fee and they will become a permanent follower and others will pledge an allegiance to you during certain conversational channels or based on achievements and quest outcomes.
If you talk to as many people as you can, you will eventually have the opportunity to ask them to follow you. There is one quest where you will need to sacrifice one of them, so make sure you don't sacrifice any that may offer training of have a certain handy ability. Some creatures may also follow you.
There is a mod for skyrim which allows you to give your horse armour (it makes your horse practically invincible btw), but without the mod installed, horses can't wear armour.
