All metals are slightly porous and have small microscopic imperfections. Foods can grab hold of these small imperfections and pores and cling to them. Adding fat or oil to the pan when it is hot will create a barrier between the food and the metal preventing stick.

Some sticking will still occur even with the oil or fat present. However, if you heat the pan and add the room temperature ingredients after the pan is hot, they will sear properly and will release from the pan once they have a good sear.
