To remember and be reminded of God's love. To appreciate what Jesus did for mankind.
Not only should we celebrate it because of what Jesus did for mankind, but because without what had happened on Christmas Day, we would have no way to be with God. Because we are sinful people and God is entirely perfect and holy, He can't even be near us unless we have Jesus' blood to cover our sin for us. But because Jesus died on the cross, when we except him as our Savior, the gap between us and God is bridged.
Jesus is celebrated because he is the son of God that laid down his life, so that we may be forgiven of our sins. He made the ultimate sacrifice and we should celebrate him on Christ-mas day.
Because it is the least they could do in appreciation of what Jesus did for them.
