addition of acid to water is highly exothermic. If water is added to acid then heat produced may cause the mixture to splash out and cause damage to your skin.Also, the test tube may also crack due to local heating. So acid is added to water drop by drop to prevent the damage.

By the Arrhenius definition: It can produce both hydrogen and hydroxide ions.

H2O --> H+ + OH-

By the Bronsted-Lowry definition it is both a proton donor and a proton acceptor.

It can donate a hydrogen ion to become its conjugate base, the hydroxide ion. (B represents a generic base)

H2O + B --> BH+ + OH-

It can accept a hydrogen ion to form its conjugate acid, the hydronium ion (HA represents a generic acid).

H2O + HA --> A- + H3O+

By the Lewis definition, the oxygen has lone electron pairs that it can donate and the hydrogen can accept an electron pair.

The concentration of ions in pure water is very low and hence it is a poor conductor of electricity. Acids can ionise better in water to produce plenty of ions and hence the conductivity of water increases when it is acidified.
