A dead human body (from a space accident) would be practically "freeze dried" or mummified in outer space, unless it orbited close to a sun. The moisture would all be frozen but some would sublimate (evaporate) into space from exposed tissues. There would still be some rotting, however, from certain hardy bacteria already present in the body (notably the digestive tract). Unless the body completely froze solid (far from a star), these would work internally, unlike the outer body surfaces which would be somewhat preserved.

There are already analogs of this : bodies of climbers killed in the thin, super-cold air of Mount Everest, and the prehistoric cavemen pulled from the permafrost of Siberia. Recovered remains show loss of much of the soft tissue but preservation of bones, skin, and muscles.
