Cake Decorating Basics For Beginners

First and foremost, is letting the cake cool completely before attempting to ice or frost. Icings and frostings are impossible to work with if the cake is warm or even room temperature. Keep the icing chilled too.

For best results, once the cakes are cooled down, let them chill in the fridge for approximately 20 minutes or so before attempting to ice or decorate.

Plan ahead for your design, so you know what colors you will need to make. Icings and frostings can be made ahead of time. Store the icing or frosting in the fridge to maintain consistency. Make sure to sift all confectionary sugar when you make your frosting, or there may be small lumps that could clog the decorating tip. Take the icing out a few minutes beforehand and stir before applying.

By visiting a craft store or cake decorating supplier, you can get an icing spreader, disposable pastry bags, icing tips and couplings. It is also recommended getting an icing comb with which to make lines with, and foil covered cake boards.

If making a layer cake, then begin by spreading the icing on top of the first layer with the icing spreader. You could use a spatula, but they are much more difficult to use. Make sure to keep the spreader parallel with the cake to avoid getting crumbs into the icing. Use light pressure in a circular motion to reach the edges. Let the first layer chill so the icing can get hard.

Spread the icing in the same fashion for the top layer. You might want to try using a star tip to apply it in a star pattern all over. If you want to make lines as commonly used with whipped cream icings, then use the icing comb.

Using a tip for a shell pattern, apply a border around the bottom and if desired, around the top. Do some practice on a plate or piece of cardboard to get the hang of applying decorations with a tip. Choose a small diameter for a writing tip to get the best results.
