If diabetes has prevented you from eating one of your favorites, try out this chocolate cake recipe to tickle your fancy.
For this recipe you need: 2/3 cup sifted non self-rising cake flour, 1/3 cup unsweetened cocoa, 12 large egg whites at room temperature, 1 1/2 tsp vanilla extract, 1 1/2 cups granulated sugar, 1/2 tsp salt and 1 1/2 tsp cream of tartar. Before you start mixing your ingredients, preheat the oven to 375 degrees. Then, sift together _ cups of sugar, flour and cocoa. Set this mixture aside. Next, beat the eggs until they are foamy. Once the eggs are beaten, add the cream of tartar, vanilla and the salt. Continue beating the eggs and add _ cups of sugar, 1 tablespoon at a time. As the sugar is incorporated into the mixture, it starts to stiffen. Continue beating for another two minutes. Once the eggs are properly beaten, sift a third of the sugar, flour and cocoa mixture over the top of the egg whites. Gently fold the ingredients in, and repeat two more times. After all the ingredients are properly mixed together, pour the batter into a cake pan. An ungreased 10-inch tube pan is preferred. As soon as the batter has settled, take a knife and cut the batter to ensure there are no air pockets in the mix. Lastly, bake 40 to 45 minutes, or until the cake springs back when gently pressed.
