Vegan eating is a rewarding lifestyle that many people choose to follow. As kids are picky eaters to begin with, it is sometimes difficult to find recipes that the entire family can enjoy. By choosing meals that are simple and tasty, even children can happily partake in this lifestyle alternative.

Tomato rice soup

During chilly weather, everyone loves a bowl of hot soup. Tomato rice soup fulfills the need for a warm, filling meal while helping to clear out the refrigerator of leftover rice. To make this delicious soup, one requires two tablespoons of flour, four cans of tomato sauce, one chopped onion and two cups of leftover rice. The chopped onion is saut'eed in a bit of oil; when brown, the flour is added and mixed. After a moment, the tomato sauce is included and allowed to cook over low heat for 15 minutes. Lastly, the rice is added, the mixture thoroughly heated, and then served.

Even though there is already a starch in the recipe, a few slices of toasted bread gives kids a fun way to soak up every last drop of this incredible soup.

Baked sweet potato fries

Baked sweet potato fries are a delicious and healthy alternative to regular, deep-fried french fries. To create this yummy dish, one needs three large sweet potatoes cut into wedges, one tablespoon of olive oil, one-quarter teaspoon each of salt and paprika, one teaspoon of cumin and a shake of cayenne pepper. In a zippered bag or large mixing bowl, all ingredients are mixed until the potatoes are thoroughly coated. Distributed in a single layer on a non-stick pan, the potatoes are baked in a 400 degree Fahrenheit oven for about 30 minutes, or under crispy on the outside and tender on the inside.

Figuring out what to make for dinner is hard enough; the limits placed on vegan diets certainly do not help, and when combined with the finicky eating habits of children, it may seem impossible to find a dinner choice the entire family enjoys. However, with a little planning and a few pantry staples, creating healthy, delicious meals is easy and quick.
