A more accurate definition of electric current would be that it is a flow of electric charges. While current flow in a metallic conductor is, indeed, a flow of electrons, in other conductors -such as electrolytes- current flow may be a movement of ions. So, it would be more accurate to define current in terms of charge flow, rather than in terms of electron flow.
