There are several variables that are associated with Dew Point and Wind Speed.

You are probably asking because, at least from my own experience, it seems that the Dew Point and Wind Speed seem to be inversely related (as one goes up, the other drops and visa-versa).

I would say that it's not that wind speed is affecting Dew Point so much as it is the other variables that are having inverse affects on both of these elements. The main contributors are Air Temperature and Relative Humidity (as well as a few others but these are the two that seem to have the highest impact).

The Dew Point is a measure of saturability of a given volume of air. What this means is that at a certain point, a volume of air will become saturated with water vapor and won't be able to hold any more. Have you ever gone out to your care in the morning and started it up and noticed that your windshield is covered with water droplets (dew)? This is because at some point, the Relative Humidity of the air reach 100% (Saturation Level or Dew Point) and the Water Vapor began to condense on your car. When the atmospheric air reaches 100% RH it can't hold any more water vapor.

Relative humidity is inversely proportional to Temperature if the amount of water vapor remains constant. In other words, if 15 cubic feet of air at 70 deg F is holding a certain volume of water vapor (let's say the equivalent of 1 qt of water) it will have a certain relative humidity at that temp (let's say 50% since I'm not going to go find the conversion formula right now). If the water vapor level stays constant (1 qt) and the air temperature rises to 80 deg F, the Relative humidity will drop to 24% (the water vapor content is at 24% of the capacity of the given volume of air to saturate at the current air temperature).

Wind speed is affected by several things like air temperature, ground temperature and even more so, water temperature. I don't know all the details of this, but that is most definitely the factor (at least more so than Dew Point).

To summarize, Dew Point is affected of Temperature and Humidity (see above), and Wind Speed is affected mostly by Temperature (temperature being the most significant contributor to both). So, it stands to reason that the Dew Point will change inversely to Wind Speed given the other factors involved.
