Acrylamide is made when the starches and sugars of food react to
heating. It is especially present in french fries, potato chips and
baked goods. You know acrylamide is happening when the food gets
golden/darker. Acrylamide is an agent that has been proven to cause
cancer in laboratory animals, so some scientists believe that it
might cause cancer in humans as well. Acrylamide: C3H3ONH2 is
formed when it is heated from 120 and 190 °Celsius.
