At ak-mak Bakeries, four generations of the Soojian family have been very busy. Since 1893, the Soojians have been baking their Armenian flat-bread. Sold under the ak-mak label, the stone-ground, whole-wheat flat crackers are staple products on the shelves of natural foods retailers. Popular at first with dieters and diabetics, the crackers have found favor with the general public and can be found at major retail food outlets nationwide. The company also makes sheets of "country-style" whole-wheat cracker bread, pita bread, and rice cakes. Its products are made with no preservatives or bleaches.
