AIB isn't so interested in the butcher and candlestick maker -- they can find their own institutes. The American Institute of Baking (AIB) is a nonprofit that focuses on education, and research for the baking and food industry. The organization performs food safety audits and certifications in the US and around the world. AIB also sets standards for food packaging, and conducts occupational safety training. Its School of Baking offers resident courses, seminars, and correspondence and online education programs. AIB has more than than 900 members worldwide, including ARAMARK Uniform Division and Otis Spunkmeyer. Founded in 1919, The AIB has offices in US, as well as Latin America, Europe, and Asia.

Harold M. Freund American Museum of Baking

The Harold M. Freund American Museum of Baking is located at AIB's headquarters and features a collection of baking figurines, bread stamps, bread and grains from Ancient Egypt, baking pans and memorabilia, and historic baking books and pamphlets.

Ruth M. Emerson Library

The Ruth M. Emerson Library is the research library of the AIB, and includes books and materials on baking and cereal science and technology.
