Beta-carotene does turn people orange, and there is beta-carotene in carrots. However, you would still have to eat a huge amount of carrots to turn orange, although if you were drinking a lot of carrot juice it becomes more achievable.

(These days beta-carotene is sold in capsule form for people wishing to have a year-round tan/orange glow).
