It should be "estimable", in cases of accurately portraying either the qualitative or quantitative characteristic of something . "Estimatable" is not a word.
i.e.:
1. My bonus this year is not estimable as it will depend on the sales level of a brand new item.
2. We were abhorred to find out that such an estimabledoctor in the medical industry was in fact, not licensed to practice.
