Honey is honey for the most part. Clover Honey is honey that is
created by bee hives that are predominantly surrounded by clover
flowers. The flowers used have some affect on the flavor, for
instance, bee hives in orange groves will have a subtle hint of
orange in their taste. According to the National Honey Board, to be
identified as Clover Honey, at least 50% of the flowers from which
pollen is collected must be that type of flower.
Bee Honey probably refers to the fact that there isn't a
specific single type of flower that can be identified in the
honey.
