During the preparation process of most foods (when it is being cooked for example) many of the naturally occurring colourants are lost. This makes the food look dull, lusterless and unappealing.

In order to make the processed product something that would be appealing, bought and consumed manufactures add artificial colorants back into the food.

incident light radiation. Materials that have a mat (lusterless) black color

have α close to 1.
