Microencapsulated malic acid is granules of malic acid coated in a thin layer of fat - usually vegetable fat.

This is a useful technique to use when coating the outside of a hard sugar candy with a sour flavour. If the malic acid was not coated, the sugar would react with the acid, causing the glucose to invert and produce fructose. This would leave you with a lovely gooey mess instead!
