    1. Any of various stout-bodied, edible fishes of the family Mugilidae, found worldwide in tropical and temperate coastal waters and some freshwater streams. Also called gray mullet.
    2. The red mullet.
  2. A hairstyle that is formed by cutting the hair short on the the top and sides and allowing it to grow longer in back.

A fish found in the waters of the Atlantic, Mediterranean and Pacific, as in coastal rivers. It usually measures 12-16 in. (30-40 cm) in length. The most common species of mullet is the gray mullet.

Serving Ideas

Mullet is eaten smoked, hot or cold. Its eggs are used to make bottarga (a Provencale specialty of salted, pressed and dried fish eggs) and taramasalata (a pink dip from Greece).

Cooking

Mullet is suited to all cooking methods (cook without gutting if small).

[MUHL-iht] The appellation "mullet" is used to identify many fish that are not mullets at all-such as the highly prized red mullet, which actually belongs to the goatfish family. True mullets belong to the gray mullet family and are commercially available in the United States as striped mullet and silver mullet. These silver-gray, moderate- to high-fat fish range in size from 1⁄2 to 4 pounds. They have firm white flesh with a mild, nutlike flavor. Mullet can be found year-round in most South Atlantic and Gulf states, less frequently elsewhere. They may be fried, baked, broiled or poached. See also fish.
