American; cakes of boiled ground rice served cold or fried.

A thick, cooked mixture made by cooking cornmeal with milk or water. It's served as a breakfast dish by adding melted butter, milk or maple syrup. Mush can also be cooked, poured into a pan and cooled, at which point it becomes solid. It's then cut into squares, sautéed until golden brown (much like polenta) and served hot, sometimes with gravy, as a side dish.

Origin: 1671

Porridge made of rice or oatmeal was an English innovation of the 1600s. The American settlers improved on it by making it with our Indian corn and then giving it the homespun name mush, derived from the "mash" used in brewing and as food for horses and cattle. Mush is celebrated in a 1671 poem which explains that the corn "being groun'd and boyl'd, Mush they make / Their hungry Servants for to slake." Five years later another poem declared, "Merchants car'd not a rush / For other fare than Jonakin and Mush." The name Jonakin later became Johnnycake (1739).

In much of the country, mush is still made of cornmeal today, but in the states along the Pacific coast, mush can be any hot cereal.
