Most pancake syrup is corn syrup with flavoring added. The only issue would be if the flavoring is a problem in a given recipe.

Are you referring to the mix while it is in the box or already mixed up?

In the box:

Pancake mix sometimes clumps. Shaking the box will help. You can also try breaking it apart with a spoon.

Already mixed up:

Pancake mix gets thicker the longer it sits. Adding a little milk or water will make it thinner.
