The abattoir technique of bleeding the animal out at slaughter. There are many techniques used including those used in ritual slaughter. The traditional methods are the slash across the throat cutting arteries, veins, trachea and esophagus and even the spinal cord, and the stab method with the knife being thrust into the jugular vein at the base of the neck.
