What is the difference between saturated and unsaturated fat?

 

Fat is a type of lipid molecule constructed by glycerol and three fatty acids. The molecular structure of the fatty acids determines whether the fat is saturated or unsaturated. Fats with hydrogen atoms but without double bonds are "saturated." Unsaturated fatty acids have double bonds, and therefore have fewer hydrogen atoms.
