Check to see if you have two sensors. One closer to the water pump on the top toward the front. This is the gauge connection on a 7.3. The second is on the drivers side between the valve cover and the exhaust manifold close to the front of the motor. (about 15/16ths deep socket) When that sensor says I'm hot the gauge pegs and the check engine light comes on. I experienced this myself very recently. part number: Standard ts-374 or wells tu96
If, by "thermostat" you mean the radiator flow valve that controls engine coolant temperature, yes. All liquid cooled engines need such a thermostat.
