A cathode ray is a beam of electrons, so there is no difference between them in terms of the composition of the beam. The method of production might vary, but cathode rays are beams of electrons.

One difference between cathode rays and canal rays is that the cathode rays stream electrons and canal rays stream positive ions. Cathode rays are in a vacuum tube and canal rays are in discharge tube. A third difference is that cathode rays are also known as electron beams or e-beams and canal rays are also known as anode rays.
