Unless you identify the axes of the graph, I don't know what graph you are talking about and can't talk about the shape of whatever it is you are graphing.

When a substance is heated, a heating curve shows the changes in temperature as well as the physical state of the substance. A heating curve can chart the temperature versus the time elapsed as the changes take place.

The flat line means there is a phase change....for example from a solid to liquid, the substance is melting....from liquid to gas the liquid is being heated to form the gas.
