You have two alternatives. Alternative 1 - Let the guest walk out, they'll keep walking and probably won't come back. Alternative 2 - Show that you truly care about the guest and try to flag them down before they leave, i.e. "Sir/M'am, wait a second, let me see what I can do to solve this problem." Then, use good judgment to resolve the problem. If you're out of a product, you're out of a product, but what can you do to prevent being out of this product again and ensure they'll come back. Bottom line, you must approach this situation as a gift. The customer is giving you the gift of turning them into a customer for life. If you can offer them a solution, provide compensation, i.e. a free dinner, etc. their loyalty to your restaurant will be second-to-none. They'll promote you in a positive light to their friends and family and by comping them a $20 dinner, you will have increased your business 10 fold as a result of their positive word of mouth.... but be sure you solve the problem of why you're out of the product they were looking for!

A "loose cannon" is someone who gets upset or angry easily, and who acts without thinking. So in a crowd of people the loose cannon would be the one who gets upset and starts something--maybe just yelling, or maybe violence.
