It is a term from the middle ages that means to run or escape.
A dark underground prison is called a dungeon. These were very popular in the medieval era, due to the difficulty of escaping, and relative ease of maintenance. A prisoner would have to escape up several floors past guards and other residents of the fortress/castle in order to escape. Alternatively, a prisoner could get out through an underground passage, but these were very rare, and often were unstable.

Press just the S and then the P. The puzzle changes the color of the letter that you press and of the letters adjacent to it. (on to off or off to on). The goal is to turn all the letters on, so with six letters in "escape" you only need to press the middle letter in the first set of three (the S) and the middle letter in the second set of three (the P).
One for each direction and the middle tunnel is an emergency escape route.
