Generally a combination of the irritable volatile anaesthetic agents use and the fact that a breathing tube may have been passed through your vocal chords, thereby irritating them and producing transient vocal hoarseness.

if you were under general anesthesia, then they would have put a breathing tube into your trachea, to make sure you were getting enough oxygen. these tubes can irritate your throat and larynx (voice box) causing you to have a dry, sore throat, and ultimately lose your voice.... don't worry, its like scraping your knee, it will heal pretty quickly and it will be like nothing ever happened :)
