The Amish can be vegetarians if they want to be since they grow their own food. However it is unlikely that many would choose to be because they produce their own food and are thus tied to the seasonal availability of anything they cannot preserve. Meat serves as an important food source for people who try to be self sufficient in the way the Amish do.
