They cease to be considered cards on the field, when they are overlaid, but do not count as 'leaving the field' for the purpose of effects that trigger from that. Also when they are sent to the graveyard for any reason, they do not count as being 'sent from the field' so again, effects that trigger from that, will not activate.

You can, only if something specifically says you can. Tribute for most Ritual Spell Cards can come from hand. But if the card doesn't specify, the tribute must come from your side of the field.
