How long can you store uncooked pinto beans?

I have never seen pinto beans spoil in less than a period of about two hours however in my years of cooking you would have to leave them out of the refrigerator for several hours before they would began to spoil. Beans are a staple food in the South and they would have to stay out all night in some cases before spoilage would sat in however If I intended on selling the beans to the public I would follow the 2 HOUR RULE and just cook a fresh pot.

Do you need the dry pinto beans first before drying them?

When drying beans, I usually let the pods partially dry by themselves on the bean plant. Be sure to watch them carefully, since the pods will break open and spill to the ground. When the pods are close to breaking open, I remove the bean pods and remove the beans, spreading them on newspaper or paper towels. Check them daily, and when they are sufficiently dry, put them in containers to store them. Dried beans will last for years. Nothing is better than the produce you grow yourself ! ( Especially if they are pesticide free, and you did NOT use chemical fertilizers . . . Manure and compost is the best way to go ! Good Luck !

Are pinto beans toxic?

If clean and rinsed they are probably no better or worse than cooked beans. But there are few beans that do well raw, and soaked beans will not taste as good or have as pleasant a consistency as cooked beans will. Some raw beans cause gastric upset, and most simply taste awful. Generally speaking, and the current fad for raw foods notwithstanding, foods have been cooked over the years for good reasons. If nothing else, it ensures that they are bacteria-free.
