When Jacob Black talks about the "bloodsuckers" he is talking about the cullens who are: Esme Cullen, Edward Cullen, Emmett Cullen, Rosalie Hale, Alice Cullen, and Jasper Hale. Carlisle Cullen is also a vampire, but Jacob likes him and considers him more of a "human" than a "bloodsucker". (Actually, he's talking about all vampires in general, not just the Cullens.) James, Laurent, and Victoria are vampires too. Yes, and so are Jane, Alec, Caius, Marcus, Kate, Eleazar, Tanya, Irina, Maria, Charlotte, Peter, the rest of the volturi, the rest of the nomads.....
Another name for vampires is "nosferatu," which is derived from a term popularized in early 20th-century literature and film. Additionally, in folklore, they are sometimes referred to as "bloodsuckers" or simply "undead." In various cultures, they may also have specific names, such as "strigoi" in Romanian folklore.
