It depends what you mean. For cakes and such you can either add cooled strong brewed coffee or some instant coffee crystals. If you're talking about pure chocolate then I'm pretty sure you can just make a thick paste of water/milk and instant coffee and add it to the melted chocolate then let it firm. Although I've never tried it I'm sure it would work fine.
