It largely depends on the fossil. Some dinosaur fossils (triceratops) are very common, and we know exactly what it's skeletal physiology was. Some dinosaurs are extrapolated as to size, shape and appearance by virtue of one bone, or in extreme cases, one tooth, because that's all scientists have. Some fossils are extremely common, such as trilobites, which roamed the shallow ocean bottoms in huge herds 500 million to 250 million years ago - you can buy authentic trilobite fossils in many gift and curio shops. As with so many things: It just depends!
