The term comes from the vintage machines. They utilized a mechanical mechanism which had an arm that you pulled, thus looking much like a person with one arm.

Slot machines are also known as one-armed bandits. They got this nickname because the machine originally had a lever that you pulled that reminded people of an arm and the fact that they often left the gambler with no money.
