There is a difference of over 400 years between the New England state settlement and the Western states. In that time, the size of a "farm" or "ranch" property dimension changed radically. The western states were divided toward cattle ranching, and that requires massive land for grazing. Since the grazing is much different in those states, larger areas were needed. Notice the difference between the southern settlements and the New England settlements. They have the same geographical features, large spaces for farming. New England was settled from the European countries which had a village tradition, hence small states. The later settlement of America had settlers which had grown up with massive land area; they did not feel the need to huddle together in protective villages.

Most western states have large sections of mountain ranges, with fewer regions that are easily inhabited by people.

i believe the answer you seek is this; people were moving west rather rapidly and settling the territories and there really wasn't a lot of time to make these neat and cool state shapes so a lot of them became squares as you can clearly see. not sure if that answers your question.
