When a cake is baked it changes its physical appearance and is thus said to undergo a physical change.
However there are many concurrent chemical changes:

  • sugars caramelize
  • proteins coagulate
  • leavening agents (baking soda etc.) release carbon dioxide
  • starches, oils and fats oxidize
