they used a combination of the compass and personal observation thus the maps where never completely accurate and every map was different in some way. when it came to sea charts they rely on the stars and compass, constellations do move as the world rotates so the compass was the best thing to go by, because they did not have a good way of telling their approximate speed the distance from land masses changed amongst the sea charts
