Plants often exhibit a phenomenon known as apical dominance (http://en.wikipedia.org/wiki/Apical_dominance), where a divergent meristem on a plant or tree is inhibited from growing by another meristem, using the chemical auxin. If the inhibitingmeristem is somehow destroyed, the inhibited meristems lose suppression, and will be able to grow again. Charting the effects of apical dominance by intentionally killing a primary meristem would serve as a worthwhile experiment. Growing two or more plants in the same soil might also produce this effect.

Experiments using the fruit of plants can also prove worthwhile. Bananas emit a chemical called ethylene to mature the fruit itself; this eventually overripens the fruit, causing the hallmark brown, and eventually black, color of "bad" bananas. Attempt leaving a bunch of bananas together, leaving bananas in separate places, placing a single banana in a sealed container, and any other combinations thereof, and chart the number of days it takes the bananas to go "bad" by merit of their innate gas releases.

Mendel's classic "pea plant" experiment is also worth trying, as the maturation period for the plants is very short, and their expressed traits relatively few. A reproduction of this experiment shows the inner workings of plant genes upon the phenotype of the plant - and of course, the experiment itself fomented the modern study of genetics.

Depends on the nature of the experiments.

Normally bean plants or tomato plants are used as they grow quickly and show rapid response to climatic and chemical experimentation. In addition if grown from good quality seed then the plants are pretty much genetically homogeneous (from a control perspective)

One that's legal and not dangerous. Do not use castor bean, marijuana or opium poppy in your science fair project - castor bean because all parts of this plant are deadly poisonous, the other two because growing them is against the law. Getting your science fair raided by the cops or the hazmat team will NOT get you advanced to the International Science and Engineering Fair!

Once you get to "safe and legal plants," you need to decide the experiment you want to conduct, but in school science fair projects peas and beans are both very popular choices.
