If you are referring to the front bearings, you have to buy a complete hub assembly.
You can drive until the bearings fail, but this risks causing other damage and making the repair more expensive. If you know the bearings are failing and you don't plan on getting rid of the car in the near future, you may as well bite the bullet and get the bearings replaced.
no you should not drive with a blown headgasket, water is now in the oil and will ruin the bearings etc.

yes.. To my knowledge the rear wheel bearings are lubricated with the differential gear lube as you drive.
