Champagne is served chilled whereas cognac is served at room temperature(if drinking neat) or served alongwith warm water. Actually, I believe s/he is asking about fine champagne, which is a type of cognac. You can drink fine champagne either at room temperature or chilled - I personally would recommend chilled.

Wine is uncarbonated and champagne is carbonated. Technically champagne is sparkling wine from the Champagne district of France, all other "champagnes" are just sparkling wine. Champagne is like youth----full of spark ,exuberance and flamboyance. Wine is like old age----calm, quiet, slow on uptake. Wine is stronger since it is fermented longer than champagne.
You could add 25ml (1 oz) Cognac to a flute of good Champagne, along with a sugar cube onto which you have put a drop of Angostura bitters. This is a classic Champagne cocktail. Made with such good ingredients, it would be a very good one.

A good cognac like ferrand should be served at ot near body tempurature in either a cognac snifter (aka "balloon"), or in a white wine glass. There are various methods and devices for warming the cognac once poured into the glass, but if u dont have access to such a device, hold the glass in both hands so your hands warm the cognac through the glass. Usually enjoyed after a fine meal, with a fine cigar if preferred.
