The easiest way to tell if your cheese has turned is by sight and by smell. Does it smell different than when you first bought it? If so most likely the bacteria in the cheese have started to break it down.

However a HARD cheese you can cut the mold off and still eat it with no worries (such as pamesean reggiano) however softer cheeses (such as cheddar) should be disposed of after molding as the mold has an easier time taking root.
