Only if they eat too much of it, just like if they eat too much grain in one sitting. Bread is a good substitute for grain for getting cattle to increase in weight, but it is of higher energy than grain and needs to be fed at a limited amount so that animals won't die of bloat or acidosis from eating too much bread.

It is possible. Cattle have evolved to eat a primarily low-caloric-density forage-based diet, resulting in a large first stomach compartment called the rumen. In the rumen there are billions of microbes (bacteria and protozoa) that digest the grass and weeds the cow consumes and create proteins and nutrients for the cow. If too much grain is given to a cow, the bacteria go into a feeding frenzy and can put too many nutrients into the cow's circulation. This can cause the cow to founder, which can be fatal depending on the severity.
