Yes, Death Knights can use their races mounts. They can use all mounts that they have access to. With the new BoA (Bind on Account) mount system, they have access to nearly all that mounts that you know of on each faction.

Not all classes can use all weapons. Paladins cannot use daggers, for instance, and Death Knights can't use guns. In the game this is to keep things in balance and make sure that not all people what the same weapon for their character. In the lore, swords belong with a warrior's profession, or that of a scout (such as rogues, warriors, hunters and the like). Druids are either wise casters (staves and daggers) or feral warriors (polearms, fist weapons) and as such have little need for swords.
You can have as many death knights as you want on your account, but you can only have 1 death knight per server (example: you have 5 death knights - 1 is on agamaggan, 1 is on doomhammer, etc.)
